Summary We are looking for a Head Chef – Roof Top Speciality Restaurant to join our pre-opening team at Andaz Lisbon.
Expected to open in Q2 2025, Andaz Lisbon will offer guests an exciting new luxury lifestyle hotel in the Portuguese capital – and it will represent a key milestone in Hyatt's continued brand growth in Southern Europe. Andaz Lisbon is set to become the second Hyatt-branded hotel in Lisbon. Located in the center of Lisbon's bustling Baixa district and situated along the main pedestrian road, Rua Augusta, the hotel will be comprised of five separate buildings, including the former offices of one of the major banks in Portugal, Banco Português de Investimento (BPI). This central building of the hotel will offer 170 guestrooms, with the surrounding four satellite buildings of the hotel offering guests various private suites to choose from. This unique Urban Resort in the city center will allow guests to fully embrace the locale and experience authentic Lisbon.
About the Role The Head Chef – Speciality Restaurant for the pre-opening of our rooftop venue - Lisbon's trendiest spots to be! You are creative and experienced in several cuisine types and have led top restaurants in your portfolio from Michelin Star to more.
Qualifications Currently Head Chef in a top-rated restaurant in Europe. Manage multiple venues in pre-opening.
Experience in managing kitchen operations, including inventory, scheduling, and cost control.
Understanding of budgeting, cost control, and pricing strategies.
Ability to manage food and labor costs effectively.
Experience with menu engineering to maximize profitability.
Ability to create innovative and seasonal menus.
Experience in leading, training, and motivating a kitchen team.
Excellent communication skills to effectively coordinate with kitchen staff and front-of-house team.
Passion for food, sourcing ingredients, and the ability to train and mentor others by inspiring and being in the kitchen.
The ability to cope under pressure in a fast-paced environment.
An awareness of hygiene and health and safety regulations.
Strong knowledge of food safety and sanitation standards.
Strong planning and organizational skills to run a streamlined operation.
Problem-solving ability to resolve issues as they arise.
Culinary talents include Portuguese, Spanish, Global.
Speak Portuguese, English, and other regional languages.
Pre-opening experience is an advantage.
