We are hiring a Head Chef to manage the kitchen of our Restaurant Ondamar and the a la carte of our hotel bar. The Sentido Galo Resort is located on the island of Madeira, comprising two hotels with a total of 202 rooms. The Resort is part of the DERTOUR group, one of the biggest European tour operators.
RESPONSIBILITIES: Working closely with the F&B Director in defining strategies for the F&B.
Create innovative menus and dishes both for buffets as well as a la carte.
Obtaining feedback on food and service quality, and handling customer needs.
Ensure high standards of food quality, consistency, and safety.
Lead the team from the front - train and mentor the staff.
Managing cost controls and controlling expenditures within the respective areas.
Monitoring inventory and purchasing supplies.
Participates in the budgeting process for the area of responsibility.
Ensure compliance with all health and safety regulations within the kitchen.
Knows and implements brand standards.
REQUIREMENTS: Passion for food to create a culinary experience for our guests.
An interest in creating and setting up something new, not only to maintain the status quo.
A minimum of 3-5 years prior experience in hospitality culinary roles.
Advanced international culinary knowledge.
Excellent leadership, communication, and time management skills.
Ability to teach and inspire team members to be their best every day.
Creativity to design new menu items and their presentation.
Proactive forward-thinking approach.
Excellent knowledge of BOH systems, ordering, and inventory management.
