Responsibilities Oversee the daily operation of all Galleys and food outlets, ensuring safe food handling and maintenance of all Galley equipment. Ensure a smooth and efficient service during meal hours through constant communication with the Maitre d'Hotel. Ensure that all products are consistently prepared to the highest possible standards. Train, coach, counsel, support, and delegate to all Galley staff. Guide the Galley staff to ensure they are updated with relevant shipboard information at all times. Oversee the entire food operation in all restaurants, as well as the operation within the ship's Galley and preparation rooms. Review and approve menus for the Crew Galley, ensuring they meet quality, quantity, nutritional value, and cultural needs. Monitor and develop work schedules and conduct performance appraisals for direct reports. Submit an updated vacation schedule of the entire Galley Department to the Chief Purser. Ensure compliance with Health and Sanitation regulations and oversee cleaning procedures in the Galley. Plan and organize upcoming cruises for the Galley Department. Forecast orders according to operational needs through the Provision Department. Establish orders for fresh produce, fish, seafood, and meat in conjunction with the Provision Master. Follow up on culinary trends to create and plan new Menus with the Fleet Executive Chef. Be visible and approachable to Guests, making rounds and visiting tables throughout the cruise. Report maintenance issues in the Galley areas in a timely manner. Ensure all Galley Department Work Registration Forms are completed correctly and submitted to the Chief Purser. Adhere to and ensure compliance with all Company Policies and Procedures
